This practice is only for Foxtrot Oscar and the three pubs, ensuring consistent and high-quality food. Ramsay, looking back in the following year (2010), didn’t apologize, saying it’s a normal practice and recalling similar things from when he worked at the Gavroche restaurant years ago.
